Abstract

Proteins are the most important elements of living things.  Nonperiodic polymers contain proteins that differ from other polymers. The first protein was isolated in the form of gluten, in 1728, the Italian Jacopo BartolomeoBeccari, who lived in 1682-1766, made from wheat flour.  Washed gluten is a complex insoluble, gluten-free protein in water.  From then on, he began to study protein.20 Amino Acids - Their molecules are similar but different made up of monomers.  Each has its own name, structure and features.  The molecule consists of an amino group with alkaline properties and a carboxyl group with acidic properties, all components are built on a specific base and general.  The presence of a single molecule in the two groups determines their high level of reactivity. These groups are linked to new nitrogen-containing new polymers, organic matter, proteins.  The process is as follows: one amino acid and another water molecule are formed, the carboxyl and free electrons are bound, having an amino group a peptide bond.  Thus, a polypeptide is formed.  The action of proteins - can make the human body using cells.
